Ingredients
  

For the Filling

  • 2 cups diced fresh or canned peaches drained if canned
  • ¼ cup granulated sugar
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg optional
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water for thickening

For the Dough

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ cup unsalted butter cold and cubed
  • ½ cup buttermilk

For Frying and Topping

  • vegetable oil for frying
  • powdered sugar for dusting

Instructions
 

  • In a mixing bowl, combine the diced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch mixture. Stir well to combine.
  • In another bowl, mix the flour, salt, and baking powder. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until a dough forms.
  • Roll out the dough on a floured surface and cut into circles. Place a spoonful of the filling on one half of each circle, fold over, and seal the edges.
  • Heat vegetable oil in a frying pan over medium heat. Fry the pies until golden brown on both sides. Remove and drain on paper towels.
  • Dust with powdered sugar before serving.

Notes

These pies can be made with fresh or canned peaches. Experiment with spices to suit your taste.
