Ingredients
  

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 cup warm buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Frying Oil

  • Vegetable oil, for frying as needed

Glaze Ingredients

  • 2 cups powdered sugar
  • 3–4 tablespoons milk or buttermilk
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, combine flour, sugar, yeast, warm buttermilk, eggs, melted butter, vanilla extract, and salt. Mix until smooth.
  • Knead the dough on a floured surface until elastic. Let it rise in a warm place until doubled in size, about 1 hour.
  • Roll out the dough to about ½ inch thickness and cut into squares.
  • Heat vegetable oil in a frying pan over medium heat. Fry the squares until golden brown on both sides.
  • For the glaze, whisk together powdered sugar, milk or buttermilk, and vanilla extract until smooth.
  • Dip the warm beignets into the glaze and let them cool on a wire rack.

Notes

You can adjust the thickness of the glaze by adding more or less milk. Serve warm for the best texture.
