Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract

Instructions
 

  • Mix dry ingredients (flour, sugar, baking powder, baking soda, cinnamon, salt) in a bowl.
  • In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract.
  • Pour wet ingredients into dry ingredients and stir until combined.
  • Heat a pan over medium heat and lightly grease with butter.
  • Pour ¼ cup batter for each pancake.
  • Cook until bubbles form, then flip and cook until golden brown.
  • Serve warm.

Notes

  • Do not overmix the batter to keep pancakes fluffy.
  • Adjust cinnamon to taste.
