Ingredients
  

For the Sausage and Vegetables

  • 1 pound smoked sausage sliced into ¼-inch rounds
  • 1 large onion chopped
  • 1 each green bell pepper chopped
  • 1 each red bell pepper chopped
  • 2 cloves garlic minced

For the Base

  • 1 can diced tomatoes undrained (14.5 ounce)
  • 1 can tomato sauce (15 ounce)
  • 1 can kidney beans rinsed and drained (15 ounce)
  • 1 can pinto beans rinsed and drained (15 ounce)
  • 1 cup long-grain white rice uncooked
  • 2.5 cups chicken broth

For Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper or more, to taste
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • to taste salt salt
  • 2 tablespoons olive oil

Optional Garnishes

  • to taste hot sauce
  • for garnish chopped green onions

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add smoked sausage and cook until browned.
  • Add onion, green bell pepper, red bell pepper, and garlic. Sauté until the vegetables are soft.
  • Stir in diced tomatoes, tomato sauce, kidney beans, pinto beans, rice, chicken broth, chili powder, smoked paprika, cayenne pepper, oregano, black pepper, and salt. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 30 minutes or until rice is cooked and liquid is absorbed.
  • Serve hot, garnished with chopped green onions and hot sauce if desired.

Notes

This dish can be customized with your favorite beans or vegetables.
