- 12 oz 340g pasta (fettuccine, penne, or any pasta of your choice)
- 2 tablespoons olive oil
- 1 lb 450g chicken breast, boneless and skinless, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 3 –4 fresh jalapeños sliced (remove seeds for less heat)
- 3 cloves garlic minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
- Fresh parsley chopped (for garnish)
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces and Cajun seasoning. Cook until browned and fully cooked, about 6–8 minutes.
Add sliced jalapeños and minced garlic. Sauté for 1–2 minutes until fragrant.
Pour in heavy cream and chicken broth. Stir well and bring to a simmer.
Reduce heat to medium-low and stir in Parmesan cheese until melted.
Add cooked pasta to the skillet and toss to coat evenly.
Drizzle with lemon juice and season with salt and black pepper to taste.
Garnish with fresh parsley before serving.
