Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts cubed

For the Vegetables

  • 1 piece red bell pepper sliced
  • 1 piece yellow bell pepper sliced
  • 1 piece green bell pepper sliced
  • 1 piece small red onion sliced

For the Seasoning and Cheese

  • 1 packet fajita seasoning
  • 4 oz cream cheese cubed
  • 1 ½ cups shredded cheddar or Mexican cheese blend
  • Olive oil for greasing

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add the cubed chicken and cook until browned.
  • Add sliced peppers and onions to the skillet. Cook until they are tender.
  • Stir in the fajita seasoning and cream cheese. Mix until well combined.
  • Transfer the mixture to a greased baking dish. Top with shredded cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

You can add other vegetables or adjust the seasoning to your taste.
