Ingredients
  

For the Salad

  • 2 cups shelled edamame
  • 2 cups frozen organic corn
  • 1 red bell pepper
  • ½ cup finely chopped red onion
  • cup chopped green onion

For the Dressing

  • 3 tablespoons lime juice
  • 2 tablespoons avocado oil
  • 1 tablespoon red apple vinegar
  • 1 tablespoon honey or agave
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • to taste cilantro for garnish

Instructions
 

  • In a large bowl, combine the shelled edamame, frozen corn, chopped red bell pepper, red onion, and green onion.
  • In a separate bowl, whisk together the lime juice, avocado oil, red apple vinegar, honey or agave, sea salt, and black pepper to make the dressing.
  • Pour the dressing over the salad and toss to combine. Garnish with cilantro before serving.

Notes

This salad is best served fresh. You can adjust the dressing ingredients to suit your taste.
