For the Salad

shelled edamame

frozen organic corn

red bell pepper

finely chopped red onion

For the Dressing

lime juice

avocado oil

tablespoon
red apple vinegar

tablespoon
honey or agave

teaspoon
sea salt

black pepper
to taste
cilantro for garnish
Instructions
In a large bowl, combine the shelled edamame, frozen corn, chopped red bell pepper, red onion, and green onion.
In a separate bowl, whisk together the lime juice, avocado oil, red apple vinegar, honey or agave, sea salt, and black pepper to make the dressing.
Pour the dressing over the salad and toss to combine. Garnish with cilantro before serving.
Notes
This salad is best served fresh. You can adjust the dressing ingredients to suit your taste.
