Instructions
Preheat your oven to 375°F (190°C).
In a baking dish, combine the rice and chicken broth.
Place the chicken breasts on top of the rice mixture.
Drizzle olive oil, salt, and pepper over the chicken.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes until the chicken is cooked through.
While the chicken is baking, prepare the tzatziki sauce by mixing yogurt, garlic, cucumber, dill, lemon juice, oregano, and paprika in a bowl.
Once the chicken is done, let it rest for a few minutes before slicing.
Serve the chicken over the rice with the tzatziki sauce on the side.
