Ingredients
  

For the Slaw

  • 2 pieces ripe mangoes, peeled and julienned
  • 2 cups shredded cabbage (green or purple, or mix)
  • 1 medium carrot, grated
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped

For the Dressing

  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a large bowl, combine the mangoes, cabbage, carrot, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, honey or maple syrup, salt, and black pepper. Pour over the slaw and mix well.

Notes

This slaw can be served immediately or chilled in the refrigerator for 30 minutes to enhance the flavors.
