Instructions
In a mixing bowl, combine soy sauce, rice vinegar, peanut butter, honey, minced garlic, chili flakes, black pepper, and parsley. Mix well to create the sauce.
In a serving dish, arrange cucumber slices and drizzle the spicy peanut sauce over them. Sprinkle with toasted peanuts.
Notes
This dish can be served chilled. Adjust the spiciness by adding more or less chili flakes according to your preference.
