Ingredients
  

For the Filling

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ cup chopped cilantro

For the Taquitos

  • 12 small flour or corn tortillas
  • Olive oil spray or 2 tablespoons olive oil

For Serving

  • Salsa, sour cream, and guacamole for serving

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix the chicken, cheeses, spices, and cilantro until well combined.
  • Place about 2 tablespoons of the filling on each tortilla, roll it tightly, and place it seam-side down on a baking sheet.
  • Lightly spray the taquitos with olive oil.
  • Bake for 20 minutes or until golden and crispy.
  • Serve with salsa, sour cream, and guacamole.

Notes

Feel free to customize the filling with your favorite ingredients. Use different cheeses or add beans for variety.
