Heat olive oil in a skillet over medium-high heat. Season the beef roast with salt, black pepper, garlic powder, and onion powder. Sear the roast in the skillet until browned on all sides.
Transfer the roast to the crockpot. Add beef broth, Worcestershire sauce, and soy sauce. Cook on low for 8 hours or until the beef is tender.
Remove the beef from the crockpot and shred with two forks. Return the shredded beef to the broth.
To serve, place shredded beef in hoagie rolls, top with provolone cheese, and garnish with parsley if desired.
Notes
You can serve the sandwiches with a side of the broth for dipping.
