Crockpot Chicken Parmesan Soup

Ingredients
  

Soup

  • 3 boneless chicken breasts
  • 1 tablespoon minced garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 cup freshly shaved Parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz rotini pasta uncooked

Topping

  • ½ cup bread crumbs
  • 1 tablespoon butter
  • cups shredded mozzarella cheese

Instructions
 

  • Place chicken breasts, minced garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth in the crockpot.
  • Cover and cook on low for 4 hours.
  • Remove chicken, shred it, and return it to the crockpot.
  • Add Parmesan cheese, heavy whipping cream, and rotini pasta. Stir well.
  • Cover and cook on high for 30 minutes, or until pasta is tender.
  • While the soup cooks, melt butter in a pan and toast bread crumbs until golden.
  • Serve the soup topped with shredded mozzarella and toasted bread crumbs.

Notes

For a thicker soup, reduce the amount of chicken broth. You can also use cooked pasta if you prefer a shorter cook time.
