Ingredients
  

Meat and Vegetables

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced

Liquids

  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 2 tablespoons tomato paste

Seasonings

  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Noodles and Cheese

  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Garnish

  • Fresh basil for garnish (optional)

Instructions
 

  • In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft.
  • Transfer the beef mixture to the Crock Pot. Stir in the crushed tomatoes, beef broth, tomato paste, oregano, basil, salt, and pepper.
  • Cover and cook on low for 4 hours.
  • About 20 minutes before serving, add the broken lasagna noodles to the soup.
  • Once cooked, stir in the ricotta, mozzarella, and Parmesan cheeses until melted.
  • Serve hot, garnished with fresh basil if desired.

Notes

This soup can be made ahead of time and reheated for a quick meal. You can also add vegetables like spinach or bell peppers for extra flavor.
