Ingredients
  

Chicken

  • 1.5 pounds boneless, skinless chicken breasts

Vegetables

  • 1 cup diced onion
  • 2 cloves garlic, minced

Broth and Cream

  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream For a lighter version, substitute half-and-half.
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • to taste salt
  • to taste pepper

Pasta and Greens

  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach

Garnish

  • 1 cup fresh basil for garnish

Instructions
 

  • Add chicken, onion, garlic, chicken broth, diced tomatoes, heavy cream, Italian seasoning, salt, and pepper to the crock pot.
  • Cook on low for 4 hours. Before serving, add tortellini and spinach, and cook for an additional 30 minutes.
  • Serve hot, garnished with fresh basil.

Notes

This soup can be adjusted for spice with red pepper flakes or made lighter by using half-and-half instead of heavy cream.
