Ingredients
  

For the Beef Mixture

  • 3 pounds beef chuck roast cut into large chunks
  • 3 pieces dried guajillo chilies stems and seeds removed
  • 2 pieces dried ancho chilies stems and seeds removed
  • 1 piece onion quartered
  • 4 cloves garlic
  • 1 14.5 ounce can diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 pieces bay leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For Serving

  • as needed pieces corn tortillas
  • as needed tablespoons oil for frying
  • as needed garnish cilantro and diced onion

Instructions
 

  • In a large skillet, heat some oil and sauté the onion and garlic until fragrant.
  • Add the beef, chilies, diced tomatoes, beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper to the Crock Pot.
  • Cook on low for 8 hours or until beef is tender.
  • Shred the beef and serve in corn tortillas with cilantro and diced onion.

Notes

Adjust seasoning to taste. You can also add cheese or other toppings as desired.
