For the Beef Mixture

beef chuck roast
cut into large chunks

dried guajillo chilies
stems and seeds removed

Instructions
In a large skillet, heat some oil and sauté the onion and garlic until fragrant.
Add the beef, chilies, diced tomatoes, beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper to the Crock Pot.
Cook on low for 8 hours or until beef is tender.
Shred the beef and serve in corn tortillas with cilantro and diced onion.
Notes
Adjust seasoning to taste. You can also add cheese or other toppings as desired.
