Ingredients
  

Chicken and Breading

  • 4 pieces boneless chicken breasts, pounded to ½ inch thickness
  • 1 cup grated Parmesan cheese freshly grated recommended
  • 1 cup panko breadcrumbs or gluten-free breadcrumbs for gluten-free version
  • ½ cup all-purpose flour or gluten-free flour for gluten-free version
  • 2 large eggs, beaten

Garlic Sauce

  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 tablespoon fresh lemon juice

Garnish (optional)

  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko and Parmesan cheese.
  • Season chicken breasts with salt and pepper. Dredge each piece in flour, dip in eggs, and coat with the breadcrumb mixture.
  • Heat butter and olive oil in a frying pan over medium heat. Cook chicken until golden brown on both sides, about 4-5 minutes per side.
  • Transfer chicken to a baking sheet and bake for 10 minutes or until cooked through.
  • In the same pan, add minced garlic and cook for 1 minute. Stir in chicken broth, heavy cream, and lemon juice. Simmer until thickened.
  • Serve chicken drizzled with garlic sauce and garnish with chopped parsley.

Notes

You can use gluten-free breadcrumbs and flour for a gluten-free version of this dish.
