Ingredients
  

Carrots

  • 6 medium carrots, peeled

Seasoning

  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped

Parmesan Cheese

  • 2 cups parmesan cheese, grated, divided

Garnish

  • parsley, chopped for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine carrots, olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss until well coated.
  • Spread the carrot mixture on a baking sheet in a single layer. Sprinkle half of the Parmesan cheese over the top.
  • Bake for 25 minutes, or until carrots are tender and edges are crispy. Remove from oven and sprinkle with remaining Parmesan cheese.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, you can add more herbs or spices to the carrot mixture.
