Instructions
Preheat the air fryer to 400°F (200°C).
In a mixing bowl, combine the Parmesan cheese, panko breadcrumbs, lemon zest, and garlic powder.
Brush the cod fillets with olive oil and season with salt and pepper.
Coat the fillets in the Parmesan mixture, pressing lightly to adhere.
Place the coated fillets in the air fryer basket in a single layer.
Cook for 12-15 minutes or until the cod is cooked through and golden brown.
While the cod cooks, mix melted butter with chopped parsley.
Serve the cod with lemon wedges and drizzle with herb butter sauce.
