Ingredients
  

Main Ingredients

  • 4 fillets cod fillets about 6 oz each
  • 2 tablespoons olive oil

Parmesan Coating

  • ½ cup grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder

Seasonings & Garnish

  • 2 tablespoons unsalted butter melted
  • 1 tablespoon fresh parsley chopped
  • 1 lemon lemon cut into wedges for serving

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • In a mixing bowl, combine the Parmesan cheese, panko breadcrumbs, lemon zest, and garlic powder.
  • Brush the cod fillets with olive oil and season with salt and pepper.
  • Coat the fillets in the Parmesan mixture, pressing lightly to adhere.
  • Place the coated fillets in the air fryer basket in a single layer.
  • Cook for 12-15 minutes or until the cod is cooked through and golden brown.
  • While the cod cooks, mix melted butter with chopped parsley.
  • Serve the cod with lemon wedges and drizzle with herb butter sauce.

Notes

You can adjust the seasoning to your taste and serve with your favorite sides.
