Ingredients
  

For the Pudding

  • 16 oz fresh strawberries stems removed and halved
  • 1.5 cups unsweetened vanilla almond milk or milk of choice
  • 5.3 oz strawberry Greek yogurt
  • 1 teaspoon vanilla extract
  • 0.5 cup chia seeds
  • 5 teaspoon pure maple syrup

Optional Toppings

  • 1 tablespoon almond butter
  • whipped cream for topping

Instructions
 

  • Blend strawberries, almond milk, yogurt, vanilla extract, and maple syrup until smooth.
  • Pour the mixture into a bowl and stir in chia seeds.
  • Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 4 hours or overnight until thickened.
  • Serve with optional toppings if desired.

Notes

For a thicker pudding, add more chia seeds. For a sweeter taste, adjust the maple syrup to your preference.
