- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 4 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 12 ounces pasta such as spaghetti or penne
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil leaves chopped
- 1 tablespoon lemon juice
Preheat the oven to 400°F (200°C).
Toss cherry tomatoes with olive oil, garlic, oregano, salt, and black pepper.
Spread on a baking sheet and roast for 20 minutes.
Cook pasta according to package instructions.
Drain pasta and mix with roasted tomatoes, ricotta, and Parmesan.
