Ingredients
  

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 12 ounces pasta such as spaghetti or penne
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss cherry tomatoes with olive oil, garlic, oregano, salt, and black pepper.
  • Spread on a baking sheet and roast for 20 minutes.
  • Cook pasta according to package instructions.
  • Drain pasta and mix with roasted tomatoes, ricotta, and Parmesan.
  • Stir in fresh basil and lemon juice.
  • Serve warm.

Notes

  • Use fresh basil for best flavor.
  • Adjust seasoning to taste.
  • Add red pepper flakes for a spicy kick.
