Ingredients
  

Protein

  • 2 pieces chicken breasts, sliced thin

Dairy

  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese

Pasta & Grains

  • 8 oz short pasta (penne, rigatoni, or farfalle)

Aromatics & Herbs

  • 3 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped

Liquids & Oils

  • 2 tablespoons olive oil
  • ¼ cup chicken broth or reserved pasta water (plus extra as needed)

Seasonings

  • to taste salt
  • to taste black pepper

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a pan, heat olive oil over medium heat. Add sliced chicken and cook until browned and cooked through.
  • Add minced garlic and cook for another minute until fragrant.
  • Mix in ricotta cheese, Parmesan cheese, and chicken broth or pasta water. Stir until well combined.
  • Add cooked pasta, basil, parsley, salt, and pepper. Toss to combine and heat through.

Notes

For extra creaminess, you can add more ricotta or a splash of cream.
