Ingredients
  

For the Rice

  • 1 cup long grain white rice Avoid brown or instant rice for best results.
  • 4 tablespoons butter Olive oil can be used for a lighter option.
  • 1 small onion, finely diced Sauté until softened without browning.
  • ½ teaspoon garlic powder Substitute with fresh garlic for a zesty kick.
  • ½ teaspoon salt Adjust based on your broth’s salinity.
  • 1 ¼ cups chicken stock Vegetable broth works for a vegetarian version.

For the Creamy Mixture

  • 1 ½ cups milk (2% recommended, divided) Consider heavy cream for an indulgent texture.
  • 1 tablespoon lemon juice Adjust to your taste for more zing.
  • ½ lemon zest from half of a lemon
  • ½ cup finely grated parmesan cheese Freshly grated gives the best flavor and texture.

For Garnish

  • 1 tablespoon fresh parsley, chopped Adds color and a fresh finish.

Instructions
 

  • In a saucepan, melt the butter over medium heat. Add the diced onion and sauté until softened.
  • Add the rice, garlic powder, salt, and chicken stock. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.
  • In a separate bowl, mix 1 cup of milk with lemon juice and zest. Once the rice is cooked, stir in the creamy mixture and parmesan cheese.
  • Adjust seasoning if necessary, and garnish with chopped parsley before serving.

Notes

This dish pairs well with grilled chicken or fish. You can also add vegetables for added nutrition.
