Ingredients
  

For the Potatoes

  • 2 pounds baby potatoes, halved

For the Sauce

  • 2 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped (optional) for extra flavor
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions
 

  • In a pot, boil the halved baby potatoes until tender, about 15 minutes. Drain and set aside.
  • In a pan, heat olive oil or butter over medium heat. Add garlic and onion, cooking until fragrant.
  • Stir in heavy cream and broth, then add salt, pepper, and thyme. Simmer for a few minutes.
  • Add the cooked potatoes to the sauce and mix well. Stir in Parmesan cheese until melted.
  • Garnish with chopped parsley before serving.
