Ingredients
  

For the Pasta

  • 250 g penne pasta or your favorite pasta shape

For the Chicken

  • 2 pieces chicken breasts cut into small bite-sized pieces
  • 1 tablespoon Cajun seasoning or more if you like it spicy
  • 1 tablespoon butter
  • 1 tablespoon cooking oil
  • to taste Salt & black pepper

For the Sauce

  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 piece red bell pepper sliced (you can also use green and yellow, or a combination of colors)
  • ½ cup white wine or chicken broth
  • 1 cup double cream heavy cream
  • ½ cup grated parmesan
  • to taste Fresh parsley for garnish

Instructions
 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a skillet, heat the butter and cooking oil over medium heat. Add the chicken pieces and Cajun seasoning, cooking until the chicken is browned and cooked through.
  • Add the diced onion, minced garlic, and sliced bell pepper to the skillet. Sauté until the vegetables are soft.
  • Pour in the white wine (or chicken broth) and let it simmer for a few minutes.
  • Stir in the double cream and grated parmesan. Mix well until the sauce is creamy.
  • Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and black pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

You can adjust the amount of Cajun seasoning to suit your taste. Feel free to add other vegetables if desired.
