For the Sauce
1smalloniondiced
3clovesgarlicminced
1piecered bell peppersliced (you can also use green and yellow, or a combination of colors)
½cupwhite wineor chicken broth
1cupdouble creamheavy cream
½cupgrated parmesan
to tasteFresh parsleyfor garnish
Instructions
Cook the penne pasta according to package instructions. Drain and set aside.
In a skillet, heat the butter and cooking oil over medium heat. Add the chicken pieces and Cajun seasoning, cooking until the chicken is browned and cooked through.
Add the diced onion, minced garlic, and sliced bell pepper to the skillet. Sauté until the vegetables are soft.
Pour in the white wine (or chicken broth) and let it simmer for a few minutes.
Stir in the double cream and grated parmesan. Mix well until the sauce is creamy.
Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and black pepper to taste.
Garnish with fresh parsley before serving.
Notes
You can adjust the amount of Cajun seasoning to suit your taste. Feel free to add other vegetables if desired.
