Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes per side. Remove from skillet and set aside.
In the same skillet, add cranberries, orange juice, orange zest, honey, soy sauce, Dijon mustard, and garlic powder. Stir well and bring to a simmer.
Return the chicken to the skillet, spooning the glaze over the chicken. Cook for another 5-7 minutes, until the chicken is cooked through and the glaze has thickened.
Garnish with fresh parsley if desired and serve.
Notes
For a smoother glaze, blend the cranberry mixture before returning the chicken to the skillet.
