Cranberry Orange Glazed Chicken

Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Glaze

  • 1 cup fresh cranberries
  • 1 cup orange juice freshly squeezed is best
  • 1 tablespoon orange zest
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Fresh parsley for garnish (optional)

Instructions
 

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add cranberries, orange juice, orange zest, honey, soy sauce, Dijon mustard, and garlic powder. Stir well and bring to a simmer.
  • Return the chicken to the skillet, spooning the glaze over the chicken. Cook for another 5-7 minutes, until the chicken is cooked through and the glaze has thickened.
  • Garnish with fresh parsley if desired and serve.

Notes

For a smoother glaze, blend the cranberry mixture before returning the chicken to the skillet.
