Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour or oat flour for softer texture
  • ½ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice or cinnamon, nutmeg, ginger blend
  • 1 teaspoon vanilla extract
  • 1-2 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8x8 baking dish.
  • In a mixing bowl, blend the cottage cheese, eggs, pumpkin puree, honey or maple syrup, and vanilla extract until smooth.
  • Add the almond flour, pumpkin pie spice, baking powder, and salt. Mix until well combined.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool before slicing into bars.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. These bars can also be frozen for longer storage.
