Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8 baking dish.
In a mixing bowl, blend the cottage cheese, eggs, pumpkin puree, honey or maple syrup, and vanilla extract until smooth.
Add the almond flour, pumpkin pie spice, baking powder, and salt. Mix until well combined.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
Let cool before slicing into bars.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. These bars can also be frozen for longer storage.
