Ingredients
  

For the Sauce

  • 1 can full-fat coconut milk
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • ½ teaspoon chili powder optional for heat
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 tablespoon honey optional, for sweetness

For the Cod

  • 4 fillets cod (about 6 oz each)
  • Salt and pepper to taste

For Garnish

  • Fresh cilantro or parsley, chopped optional
  • Lime wedges optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix together coconut milk, olive oil, curry powder, turmeric, ginger, chili powder, garlic, lime juice, salt, pepper, and honey. Stir until well combined.
  • Place the cod fillets in a baking dish and season with salt and pepper. Pour the coconut curry sauce over the fillets.
  • Bake in the preheated oven for about 20 minutes or until the fish is cooked through and flakes easily with a fork.
  • Garnish with chopped cilantro or parsley and serve with lime wedges if desired.

Notes

You can adjust the spices based on your heat preference. Serve with rice or vegetables for a complete meal.
