For Rolling

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the flour, cinnamon, baking powder, salt, and coffee granules.
In another bowl, mix the melted butter, brown sugar, egg, and vanilla extract until well combined.
Gradually fold the dry ingredients into the wet ingredients until a dough forms.
Shape the dough into 1-inch balls, then roll them first in granulated sugar and then in powdered sugar.
Place the balls on the prepared baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container for up to 5 days. For extra flavor, add a pinch of nutmeg.
