Ingredients
  

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoon instant coffee granules

Wet Ingredients

  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter melted
  • ¾ cup brown sugar
  • 1 large egg

For Rolling

  • ¼ cup granulated sugar
  • ¼ cup powdered sugar

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cinnamon, baking powder, salt, and coffee granules.
  • In another bowl, mix the melted butter, brown sugar, egg, and vanilla extract until well combined.
  • Gradually fold the dry ingredients into the wet ingredients until a dough forms.
  • Shape the dough into 1-inch balls, then roll them first in granulated sugar and then in powdered sugar.
  • Place the balls on the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to 5 days. For extra flavor, add a pinch of nutmeg.
