Instructions
In a mixing bowl, combine the wet ingredients: milk, egg yolks, vegetable oil, and vanilla extract.
In another bowl, mix the dry ingredients: flour, cornstarch, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
Whisk the egg whites until stiff peaks form, then gently fold into the wet and dry mixture.
Preheat the waffle maker and pour the batter onto the hot surface. Cook until golden brown.
Serve with maple butter and warmed maple syrup.
Notes
You can add toppings like fresh fruits or whipped cream if desired.
