Ingredients
  

Steak Marinade

  • 1 ¼ pounds flank steak
  • cup olive oil
  • 1 lime zested and juiced
  • 1 tablespoon minced garlic
  • ½ cup minced cilantro
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper

Bowl Ingredients

  • 2 cups cooked white rice
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 avocado
  • 1 batch cilantro lime crema see separate recipe

Optional Add-ins

  • Chopped lettuce
  • Sauteed bell peppers and onions

Instructions
 

  • In a mixing bowl, combine olive oil, lime zest, lime juice, minced garlic, cilantro, salt, and pepper. Add the flank steak and marinate for at least 30 minutes.
  • Grill or pan-sear the marinated steak over medium-high heat for about 6-8 minutes per side for medium doneness. Let it rest before slicing.
  • In serving bowls, layer cooked rice, black beans, corn, sliced steak, and avocado. Top with cilantro lime crema and optional add-ins if desired.

Notes

You can customize your bowls with your favorite toppings like chopped lettuce or sautéed vegetables.
