Instructions
In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, dried cherries, and graham crackers. Mix until smooth.
Chill the mixture for about 15 minutes, then scoop and roll into small balls.
Melt the chocolate chips and coconut oil in a double boiler. Dip each truffle in the chocolate, then place on a parchment-lined tray to set.
Notes
Store truffles in the refrigerator for up to one week. You can also sprinkle crushed graham crackers on top for added texture.
