Ingredients
  

For the Truffle Filling

  • 8 oz Cream Cheese softened
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract pure for best flavor
  • 1 cup Dried Cherries chopped or use fresh cherries
  • ½ cup Graham Crackers optional, crushed

For the Chocolate Coating

  • 1 cup Semi-Sweet Chocolate Chips or dark chocolate
  • 1 tablespoon Coconut Oil or vegetable oil

Instructions
 

  • In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, dried cherries, and graham crackers. Mix until smooth.
  • Chill the mixture for about 15 minutes, then scoop and roll into small balls.
  • Melt the chocolate chips and coconut oil in a double boiler. Dip each truffle in the chocolate, then place on a parchment-lined tray to set.

Notes

Store truffles in the refrigerator for up to one week. You can also sprinkle crushed graham crackers on top for added texture.
