Ingredients
  

For the salmon

  • 1 ½ pounds salmon fillets skin removed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 chipotle pepper finely minced
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the pineapple salsa

  • 1 ½ cups fresh pineapple diced
  • ¼ cup red onion finely chopped
  • ½ jalapeño seeded and minced
  • 2 tablespoons fresh cilantro chopped
  • 1 lime juice of
  • 1 pinch salt

For serving

  • 8 small corn or flour tortillas
  • ½ cup shredded cabbage or lettuce optional

Instructions
 

  • In a mixing bowl, combine olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper. Mix well.
  • Marinate the salmon fillets in this mixture for at least 15 minutes.
  • While the salmon is marinating, prepare the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in another bowl.
  • Heat the grill or skillet over medium-high heat. Cook the marinated salmon for about 5-7 minutes on each side, or until cooked through.
  • Warm the tortillas on the grill or skillet for about 30 seconds each side.
  • Assemble the tacos by placing pieces of salmon on the tortillas, topping with pineapple salsa, shredded cabbage or lettuce, and garnishing with lime wedges and extra cilantro.

Notes

You can adjust the spice level by adding more or less jalapeño to the salsa.
