Ingredients
  

For the Chicken and Beans

  • 1.5 lbs boneless skinless chicken thighs cut into bite-size pieces
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon oregano
  • salt and pepper to taste

For the Enchilada Sauce

  • 15 oz canned black beans rinsed and drained
  • 1.5 cups red enchilada sauce
  • 0.5 cup salsa

For the Tortillas and Cheese

  • 6 small white corn tortillas cut into 1" strips
  • 1 cup Mexican blend cheese shredded

Instructions
 

  • In a skillet, cook the chicken thighs over medium heat until no longer pink.
  • Add garlic powder, cumin, oregano, salt, and pepper to the skillet and stir well.
  • Stir in black beans, enchilada sauce, and salsa. Bring to a simmer.
  • Add tortilla strips and cheese on top, cover, and cook until cheese is melted.

Notes

This dish can be served with sour cream or avocado for added flavor.
