- ½ cup unsalted butter softened but still cold
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup creamy peanut butter
- 1 large egg
- ½ teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup old-fashioned rolled oats
- 1 cup M&Ms plus extra to top cookies
- ½ cup mini semi-sweet chocolate chips
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Add peanut butter, egg, and vanilla; beat until smooth.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually stir dry ingredients into the wet ingredients until just combined.
Fold in rolled oats, M&Ms, and chocolate chips.
Scoop dough into rounded tablespoons on prepared baking sheet, spaced 2 inches apart.
Press a few extra M&Ms on top of each dough ball.
Bake 10–12 minutes until edges are golden and centers are soft.
Cool on baking sheet for 5 minutes before transferring to wire rack.
