Chewy Maple Cinnamon Cookies

Ingredients
  

  • ½ cup pure maple syrup
  • 1 teaspoon maple extract
  • 1 cup brown sugar
  • ½ cup unsalted butter melted
  • 1 large egg
  • 2 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon fine salt
  • 1 cup white chocolate melting wafers

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the maple syrup, maple extract, brown sugar, melted butter, and egg. Mix well.
  • Add the flour, cinnamon, baking soda, and salt to the wet ingredients. Stir until just combined.
  • Fold in the white chocolate melting wafers.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 10 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra flavor, drizzle melted white chocolate over the cooled cookies.
