Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
In a mixing bowl, combine the flour, salt, and baking powder. In another bowl, whisk eggs, melted butter, sugar, vanilla, and milk. Mix wet ingredients into dry ingredients until just combined. Gently fold in half of the cherry pie filling.
Fill each muffin liner with the batter and top with remaining cherry pie filling.
For the streusel topping, mix cold butter, flour, baking powder, sugar, and cinnamon in a bowl until crumbly. Sprinkle the mixture on top of the muffins.
Bake for 20 minutes or until a toothpick comes out clean. Let cool before serving.
Notes
Store muffins in an airtight container. You can add nuts or oats to the streusel for extra texture.
