Instructions
Preheat your oven to 350°F (175°C) and grease your baking pan.
In a mixing bowl, combine light brown sugar, kosher salt, vanilla extract, all-purpose flour, ground cinnamon, ground nutmeg, baking powder, egg, unsalted butter, and grated carrots. Mix until well combined.
In another bowl, beat together cream cheese, egg yolk, and granulated sugar until smooth.
Spread the batter into the prepared baking pan and drop spoonfuls of the cream cheese mixture on top. Swirl with a knife.
Bake for 30 minutes or until a toothpick comes out clean. Allow to cool before cutting into bars.
