Instructions
 

  • Preheat your oven to 350°F (175°C) and grease your baking pan.
  • In a mixing bowl, combine light brown sugar, kosher salt, vanilla extract, all-purpose flour, ground cinnamon, ground nutmeg, baking powder, egg, unsalted butter, and grated carrots. Mix until well combined.
  • In another bowl, beat together cream cheese, egg yolk, and granulated sugar until smooth.
  • Spread the batter into the prepared baking pan and drop spoonfuls of the cream cheese mixture on top. Swirl with a knife.
  • Bake for 30 minutes or until a toothpick comes out clean. Allow to cool before cutting into bars.

Notes

For extra flavor, consider adding nuts or raisins to the batter.
