Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until combined.
For the cheesecake filling, mix the cream cheese, granulated sugar, and vanilla extract until smooth.
Take a spoonful of cookie dough, flatten it, and place a small amount of cheesecake filling in the center. Wrap the dough around the filling and roll it into a ball.
Place the cookie balls on the prepared baking sheet and bake for 10-12 minutes, until lightly golden.
Once baked, allow the cookies to cool slightly before drizzling caramel sauce over the top.
Notes
Store the cookies in an airtight container. You can also add nuts or chocolate chips to the cookie dough for extra flavor.
