  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar for rolling

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, mix cake mix, peanut butter, eggs, and vanilla until smooth.
  • Roll dough into 1-inch balls.
  • Roll each ball in sugar to coat.
  • Place on baking sheets, 2 inches apart.
  • Press down gently with a fork to make a crisscross pattern.
  • Bake 10–12 minutes until edges are golden.
  • Cool on sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

  • Use creamy peanut butter for best texture.
  • Chilling dough for 30 minutes helps reduce spreading.
  • Freeze unbaked dough balls or baked cookies for up to 3 months.
  • Add chocolate chips or chopped peanuts for variety.
  • Naturally dairy-free if using a dairy-free cake mix.
