Ingredients
  

  • 2 large chicken breasts (or thighs)
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, garlic, red bell pepper, and jalapeño. Sauté until softened.
  • Add chicken breasts, Cajun seasoning, salt, and pepper. Cook until chicken is no longer pink.
  • Stir in white beans and chicken broth. Bring to a simmer.
  • Add cream cheese and heavy cream. Stir until fully incorporated.
  • Simmer for 15-20 minutes, stirring occasionally.
  • Add lime juice and chopped cilantro before serving.

Notes

Serve hot with additional cilantro or lime wedges if desired.
