Ingredients
  

For the Pasta Bake

  • 12 oz penne or rotini pasta
  • 2 breasts chicken, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste

Optional garnish

  • Chopped parsley for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large pot, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until softened.
  • Add the minced garlic and cubed chicken. Season with Cajun seasoning, salt, and pepper. Cook until chicken is no longer pink.
  • Stir in cream cheese, heavy cream, chicken broth, and paprika. Mix until smooth.
  • Add the cooked pasta to the pot and mix well to coat.
  • Transfer the mixture to a baking dish. Top with shredded cheddar and Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  • Remove from oven and let cool slightly. Garnish with chopped parsley if desired.

Notes

You can adjust the amount of Cajun seasoning to suit your taste.
