Instructions
Preheat your oven to 350°F (175°C).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large pot, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until softened.
Add the minced garlic and cubed chicken. Season with Cajun seasoning, salt, and pepper. Cook until chicken is no longer pink.
Stir in cream cheese, heavy cream, chicken broth, and paprika. Mix until smooth.
Add the cooked pasta to the pot and mix well to coat.
Transfer the mixture to a baking dish. Top with shredded cheddar and Parmesan cheese.
Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
Remove from oven and let cool slightly. Garnish with chopped parsley if desired.
Notes
You can adjust the amount of Cajun seasoning to suit your taste.
