Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 2 tablespoon Cajun seasoning
  • 1 tablespoon olive oil

For the Pasta and Sauce

  • 20 oz cheese tortellini fresh or frozen
  • 3 tablespoon butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup parmesan cheese grated
  • 1 teaspoon Italian seasoning

Instructions
 

  • Cook the tortellini according to package instructions. Drain and set aside.
  • Toss the chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • Whisk in heavy cream, chicken broth, parmesan cheese, and Italian seasoning. Simmer for 3-4 minutes until slightly thickened.
  • Add the cooked tortellini and chicken to the sauce. Stir to coat and heat for 2 minutes. Serve immediately.

Notes

For extra spice, add more Cajun seasoning to taste. You can also substitute shrimp for chicken.
