Ingredients
  

For the Pickling Mixture

  • 1 ½ cups white vinegar
  • ½ cup water
  • cup sugar
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon mustard seeds
  • ½ teaspoon black peppercorns
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt

For the Brussels Sprouts

  • 2 cups Brussels sprouts small, whole or halved
  • ½ cup sliced jalapeños
  • 2 cloves garlic smashed

Fresh herbs

  • 1 sprig Fresh thyme or dill for garnish

Instructions
 

  • In a pot, combine vinegar, water, sugar, Cajun seasoning, mustard seeds, black peppercorns, red pepper flakes, and salt. Bring to a boil.
  • Add Brussels sprouts, jalapeños, and garlic to the pot. Simmer for 10 minutes.
  • Pour the mixture into jars and let cool. Garnish with fresh thyme or dill.

Notes

These pickles can be stored in the refrigerator for up to 2 weeks.
