For the Filling

  • 1 cup packed light brown sugar
  • 4 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 cups milk
  • 2 egg yolks beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

For the Crust

  • 1 9 inch pie crust baked

Instructions
 

  • In a saucepan, mix brown sugar, cornstarch, and salt. Gradually add milk while stirring until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the beaten egg yolks, butter, and vanilla.
  • Pour the filling into the baked pie crust. Allow it to cool before serving.

Notes

Chill the pie in the refrigerator for a firmer texture.
