Ingredients
  

For the Cookie Dough

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Filling

  • 1 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon

For the Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk

Decoration

  • Sprinkles (optional) for decoration

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix flour, baking powder, baking soda, and salt.
  • In another bowl, cream together butter, brown sugar, and granulated sugar. Add eggs and vanilla extract.
  • Gradually mix the dry ingredients into the wet ingredients until combined.
  • For the filling, mix brown sugar, cornstarch, and cinnamon in a bowl.
  • Roll out dough, cut into shapes, fill with the brown sugar mixture, and cover with another piece of dough.
  • Brush with milk and bake for 15 minutes or until golden.
  • Let cool, then mix powdered sugar and milk for icing and drizzle on cookies.
  • Add sprinkles if desired.

Notes

You can adjust the sweetness by varying the amount of brown sugar in the filling.
