Instructions
Preheat the oven to 350°F (175°C).
In a bowl, mix flour, baking powder, baking soda, and salt.
In another bowl, cream together butter, brown sugar, and granulated sugar. Add eggs and vanilla extract.
Gradually mix the dry ingredients into the wet ingredients until combined.
For the filling, mix brown sugar, cornstarch, and cinnamon in a bowl.
Roll out dough, cut into shapes, fill with the brown sugar mixture, and cover with another piece of dough.
Brush with milk and bake for 15 minutes or until golden.
Let cool, then mix powdered sugar and milk for icing and drizzle on cookies.
Add sprinkles if desired.
Notes
You can adjust the sweetness by varying the amount of brown sugar in the filling.
