Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks

For the Sauce

  • 1 can pineapple chunks with juice do not drain
  • 0.5 cup brown sugar light or dark
  • cup low-sodium soy sauce
  • 2 tablespoon rice vinegar
  • 1 teaspoon ground ginger or 1 tablespoon fresh grated
  • 1 tablespoon cornstarch
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • optional Red pepper flakes
  • optional Chopped green onions for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chicken to the skillet and cook until browned and cooked through.
  • In a mixing bowl, combine pineapple with juice, brown sugar, soy sauce, rice vinegar, ginger, garlic powder, salt, and pepper.
  • Pour the sauce over the chicken in the skillet and simmer for a few minutes.
  • If desired, thicken the sauce with cornstarch mixed with water.
  • Garnish with red pepper flakes and chopped green onions, then serve.

Notes

You can adjust the sweetness by varying the amount of brown sugar.
