Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks

For the Sauce

  • 1 can (20 oz) pineapple chunks with juice do not drain
  • 0.5 cup brown sugar light or dark
  • 0.33 cup low-sodium soy sauce
  • 2 tablespoon rice vinegar
  • 1 teaspoon ground ginger or 1 tablespoon fresh grated
  • 1 tablespoon cornstarch
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • optional red pepper flakes for heat
  • optional chopped green onions for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chicken chunks and cook until browned, about 5-7 minutes.
  • In a mixing bowl, combine pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, and garlic powder. Stir well.
  • Pour the sauce over the chicken in the skillet. Bring to a simmer and cook for an additional 10-15 minutes, until chicken is cooked through.
  • If desired, mix cornstarch with a little water and add to the skillet to thicken the sauce. Season with salt, pepper, and red pepper flakes.
  • Garnish with chopped green onions before serving.

Notes

This dish pairs well with rice or noodles. Adjust the sweetness and heat to your preference.
