pineapple chunks with juice

Instructions
Heat olive oil in a skillet over medium heat. Add chicken chunks and cook until browned, about 5-7 minutes.
In a mixing bowl, combine pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, and garlic powder. Stir well.
Pour the sauce over the chicken in the skillet. Bring to a simmer and cook for an additional 10-15 minutes, until chicken is cooked through.
If desired, mix cornstarch with a little water and add to the skillet to thicken the sauce. Season with salt, pepper, and red pepper flakes.
Garnish with chopped green onions before serving.
