Ingredients
  

For the Casserole

  • 1.5 cups uncooked long-grain brown rice (285g)
  • 2 cups cooked black beans or 1 can, drained and rinsed (~340g)
  • 1 medium onion, diced
  • 1 cup diced bell peppers (any color)
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14 oz / 400g)
  • 1.5 cups vegetable broth (360ml)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika (optional)
  • to taste Salt and pepper (start with 1 teaspoon salt)

For Garnish

  • Fresh cilantro for garnish
  • Lime wedges (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the brown rice, black beans, onion, bell peppers, garlic, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  • Pour the mixture into a casserole dish and cover with foil.
  • Bake in the preheated oven for 45 minutes.
  • Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro and serve with lime wedges if desired.

Notes

This dish is versatile. You can add other vegetables or spices based on your preference.
