Ingredients
  

For the Salad

  • 4 cups broccoli florets about 2 small heads, chopped into small pieces
  • 1 large Honeycrisp apple or 2 small, cored and diced
  • cup dried cranberries
  • cup pecans or walnuts toasted and roughly chopped
  • ¼ cup red onion thinly sliced
  • ½ cup sharp cheddar cheese cubed or shredded (optional)

For the Dressing

  • cup mayonnaise or plain Greek yogurt
  • tablespoons apple cider vinegar
  • 1 tablespoon honey
  • ¼ teaspoon black pepper
  • teaspoon salt

Instructions
 

  • In a large bowl, combine the broccoli, diced apple, dried cranberries, nuts, red onion, and cheddar cheese.
  • In a separate bowl, whisk together the mayonnaise or yogurt, apple cider vinegar, honey, black pepper, and salt.
  • Pour the dressing over the salad and toss to combine.

Notes

This salad is best served fresh but can be stored in the refrigerator for a few hours before serving.
